What are some easy-peasy recipes for road trip?

You could get an electric stove ( I can't recall the exact name of it at the moment) but it has 2 burners on it and just plugs into any electric outlet in the motel room for simple easy good cooking, Do you really think you are going to eat sandwiches for a month..... The "stove"s about 3ft long and about 1 ft wide and sits on a table top.
